From the History of Baking Flatcakes by Khujand-city Population in the XVI-th – the Beginning of the XX-th Centuries

Abstract

The article dwells on the history of flatcake baking by the population of Khujand-city in the period of the XVI-th – the beginning of the XX-th centuries. Proceeding from the works of Russian travellers, military servicemen, connoisseurs of the region and officials who visited Central Asia with different objectives, Tajik ethnographers and field explorers, the author makes an endeavour to analyze the role and place of bread bakers in every day economy urban life. She pays special attention to the system of allocation of artisans` dwellings, especially those ones of bread bakers, and their working establishments in Khujand. The author describes in details the technology of bread baking in the form of flatcakes, she writes a lot about a preservation of the traditional ancient technique of the craft in question.
